- 1/2 cup unsweetened applesauce
- 1/2 tsp. vanilla extract
- 1 tsp. cinnamon
- 1/2 tsp. nutmeg
- 1/2 tsp. ground ginger
- 1/4 cup of your favorite nut butter
- 2 tbsp. milk/yogurt of your choice
- 1 tsp. maple syrup (optional)
- Ice (optional)
Vegetarian Non-Tuna Melt (by cookingwithom)
1 cup of overnight soaked raw almonds
1/2 cup overnight soaked raw shelled sunflower seeds
3/4 cups of water
1 tsp Salt
1 tbs nutritional yeast (optional)
1/4 tsp hing or asafoetida (optional)
Juice of 1 lime
1 celery stalk finely chopped
2 tbs Italian parsley, finely chopped
1 tomato, sliced into 1/4 inch slices
Sliced cheddar cheese of your choice.
1 loaf of Rye bread
Rinse the almonds and the sunflower seeds and place them in a food processor with the water, salt, hing and lime and blend until the mixture acquires a soft consistency.
Transfer the mixture into a bowl and add the celery and parsley.
Assembling the sandwiches:
Spread a few scoops of the non-tuna salad over a slice of rye bread, top it with a slice of tomato and place the cheddar cheese on top. Place the open sandwich in a broiler until the cheese melts.
Serve with pickles.
